Maria Pergay created a silver candelabrum for Princess Grace of Monaco and a tortoiseshell couch for Pierre Cardin. ''Beauty is like food,'' says Pergay, who is 75. ''I feed my eyes.'' This spring, Pergay's latest works are displayed at the Demisch Danant and Lehmann Maupin galleries in New York, and the monograph ''Maria Pergay: Between Ideas and Design,'' by Suzanne Demisch (Demisch Danant/D.A.P., $85), will be released. Pergay's wit is evident in new pieces, like a stainless-steel and Macassar ebony cabinet, adorned with a giant safety pin. Though she says she can't draw, relying on a team of artisans to realize her ideas, Pergay is unabashed. ''I could lie and tell you it's terribly hard work,'' she says with a chuckle. ''But really, I've had a life of fun!''
